Although I am not a huge fan of chicken breasts, these chicken nuggets are really good. Take care in frying them as the pecans have a tendency to burn.
Cut 3 boneless skinless chicken breasts into small pieces
In a food processor pulse 1 cup of pecans until they are the texture of breadcrubs
Beat 2 eggs and skim milk
Dredge chicken in white whole wheat flour, dip in the egg bath and roll in pecans
Shallow fry in safflower oil
Drain on paper towel and sprinkle with salt
I serve this with my go-to Honey Mustard: Honey, Grey Poupon, a few grinds on fresh black pepper
