Shrimp with Coconut Two Ways

I love deep fried coconut shrimp, and I am always looking for new ways to serve shrimp with coconut. Here are two options:

Grilled Shrimp with a Coconut Reduction
Toss raw shrimp with fresh minced garlic, turmeric, cumin and salt and pepper.
Cook on a grill or in grill pan
In a sauce pan reduce a small amount of coconut milk, honey and a pinch of sweetened shredded coconut
Drizzle thickened reduction over shrimp and top with more shredded coconut

Coconut Milk Poached Shrimp and Red Lentils
Simmer coconut milk and a splash of water
Add red lentils (red lentil are key because of they cook very quickly)
Add a pinch of cinnamon, pinch of salt and sweetened shredded coconut (however much you like)
Add cleaned and shelled raw shrimp, the mixture should still be soupy
Stir in a small amount of brown sugar
