This is just a simple recipe with some of my favorite flavors. I used Hodgson’s Mill Whole Wheat Couscous, and it was surprisingly light. I thought whole wheat couscous might be like little pebbles but it fluffed right up. I sauteed an onion and garlic in olive oil and made the couscous with chicken stock. I added a chopped red pepper, cubed feta, and chopped fresh parsley. We have lots of fresh parsley right now because our backyard woodchucks have decided they don’t like it. My dill plants and tomatoes were not so fortunate. I served this with a few Kalamata olives on top. It was a really good and easy summer dinner.
