Peanut Butter and Banana Sandwich

Paleo-Nut-Butter-Cups-Reeses-Peanut-Butter-Cup-Substitute

The peanut butter and banana sandwich is sometimes called a Velvet Elvis. According to legend, ‘The King’ would order a dozen or more sandwiches for one sitting alone.

The peanut butter and banana sandwich is the very essence of comfort food.

Of course, it’s not the healthiest sandwich, but it is one of the most interesting Southern culinary delights. Though it might sound disgusting to some, the peculiar combination of peanut butter and bananas can be addictive. It’s a sure fire pleaser for kids and anyone with a serious sweet tooth.

The Velvet Elvis can be eaten as a dessert, as a snack or as a meal (it’s also a popular lunch item). Depending upon the region, the recipe for this delightful, unique sandwich varies. The two most popular versions are plain and grilled.

Here’s a recipe for the plain, non-fried PB&B. It’s no frills, lower in fat and calories and easy to prepare.
Peanut Butter and Banana Sandwich

Ingredients:

2 tablespoons of creamy peanut butter
2 slices of soft, white bread
1 whole ripe banana

Preparation:

Spread peanut butter evenly on one side of a slice of bread.
Slice the banana into 1/2-inch chunks and place over the peanut butter close together, covering it completely.
Top with the other slice of bread.

The following is a fried version of the sandwich. In this recipe, the sweetness of the honey balances out the saltiness of the fried bacon. If you’re using organic peanut butter, the honey mixes with it nicely, as well.
Fried Peanut Butter and Banana Sandwich with Bacon

Ingredients:

2 tablespoons of creamy peanut butter
2 slices of Texas Toast bread
1 whole ripe banana
2 tablespoons of softened butter
1 tablespoon of honey
3 slices of bacon

Preparation:

Saute the bacon until crisp.
Spread peanut butter evenly on one side of a slice of bread.
Slice the banana into 1/2-inch chunks and place over the peanut butter close together, covering it completely.
Add the slices of bacon.
Drizzle the honey over the bacon and bananas.
Top with the other slice of bread.
Heat 1 tablespoon of butter in a frying pan over low heat.
Place sandwich in pan and brown one side for 3 to 4 minutes.
Add 2 ounces of butter to the pan and flip sandwich, cooking the other side to a golden brown (and the peanut butter begins melting).
Cut in half and serve hot.

Note: For a more healthful take on this recipe, try using regular slices of wheat bread, leaving off the bacon and substituting Smart Balance butter for regular butter.
